Makes about 12
- 4 eggs
- 1/2 cup granulated sugar
- 3/4 cup self-rising flour
- 2 tablespoons vegetable oil
- 1 teaspoon pure vanilla extract
- Preheat oven to 350 °F
- Sift flour, set aside
- Using an electric mixer with the whisk attachment, whisk eggs and sugar at medium speed until pale and slightly creamy
- Add vegetable oil and vanilla extract
- Fold in flour gently in 2-3 portions. Batter is slightly runny.
- Brush paper muffin cups with vegetable oil and pour in mixture
- Bake in muffin tins for about 16-18 minutes
