Heart-Shaped Meringue Cookies 

My daughter wrote me this poem couple years ago for Valentine’s Day and it’s been on the wall beside my bed. I thought I would share it here. Valentine's poem

“What is love?  What is special?  It’s Mom
No matter what she is, I love her
No matter what she looks like, I love her
With a balance family, she is the Best Mom Ever! “

This is definitely the sweetest poem I’ve ever read ! My daughter is such a lovely girl.  She is creative, funny, outgoing, but also very sensitive. I love her so much ! Of course I love my son too, but I guess it’s unlikely a twelve year-old boy would write his mom a poem….. 😁 To treat my two little sweethearts, I made these heart-shaped meringue cookies.  They are light, crunchy and super easy to make.  

Makes about 16 cookies

  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 30 g granulated sugar or vanilla sugar
  • red food colouring (I use icing colours) 
  1. Preheat oven to 225°F
  2. Using an electric mixer with whisk attachment, whisk egg whites and cream of tartar at medium speed until frothy
  3. Add food colouring
  4. Increase speed to high and slowly add in sugar
  5. Whisk until a stiff peak is formed
  6. Transfer into piping bag with star tip
  7. Pipe onto cookie sheets lined with parchment paper
  8. Bake for about 40 minutes, depending on size of cookies, they should be dry to touch
  9. Turn off oven and leave cookies in oven for at least 2 hours to dry
  10. Remove from oven and cool completely

Note : When baked, the cookies will turn golden slightly, changing the colour of them

Peach Frozen Yoghurt

I finally got an ice cream machine! Now there are so many more recipes I can do! This is my first one using my new toy. My friend and her kids taste tested it for me and they all like it!

Makes about 1 L
Total time: 30 minutes (for soft serve )

  • 250 g frozen peaches
  • 600 g full fat plain Greek yoghurt
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon pure extract
  1. Blend peaches,100 g of yoghurt and lemon juice into a puree
  2. Whisk remaining yoghurt, sugar and vanilla extract until smooth
  3. Add puree to yoghurt mixture, mix well 
  4. Mixture should be cold, if not, you can put it in the fridge for 2-3 hours before churning
  5. Put into an ice cream machine according to manufacturer’s instructions
  6. Serve right away as a soft yoghurt or put in air tight container and keep in freezer for up to 1 month

Nutella Rice Crispy Square

Rice crispy square is one of my kids’ favourite snacks and it is so easy to make.  Adding a little Nutella to the recipe makes them even yummier ! 

  • 50 g unsalted butter
  • 3 cups mini marshmallows
  • 1/2 cup Nutella spread
  • 5 cups crispy rice cereal
  1. Melt butter and marshmallows in a non-stick pot over low heat
  2. Add Nutella, mix until blended
  3. Remove from heat and stir in rice cereal
  4. Pour into a 9×13 baking pan lined with parchment paper
  5. Press firmly and evenly
  6. Cut into squares when cooled
