Gingerbread Eggnog Trifle

Christmas is only 2 days away ! It is the most wonderful time of the year, but it can also be the craziest time of the year ! Shopping, baking, cooking, decorating…..I think we all wish we had 48 hours in a day ! But to me, spending time with family and friends is more important and is the best Christmas gift of all ! So, I decided to make this quick dessert so I can have more time snuggling with my kids after dinner ! Gingerbread and eggnog ! Nothing says Christmas more than these two  flavours together and it’s so simple to make ! You can even get the kids to make their own dessert !  Have a very Merry Christmas everyone ! 

Makes about 6 – 8 servings

    • About 10 gingerbread cookies
    • 500 g vanilla cake, break into chunks (you can use store-bought cake or I just used mug cakes, see recipe below)
    • 1 box instant vanilla pudding mix
    • 500 mL light eggnog
    • 250 mL cold whipping cream
    1. Add eggnog to pudding mix, whisk for about 2 minutes until thick, keep in refrigerator until use
    2. In a separate bowl, using an electric mixer, beat whipping cream until stiff peak
    3. Crush gingerbread cookies into pieces 
    4. To assemble, layer cookies, cake, pudding and whipped cream
    5. Sprinkle top with more cookie crumbs 

For the mug cake

  • 75 g unsalted butter, melted, cool slightly 
  • 120 g granulated sugar
  • 120 mL milk
  • 2 eggs
  • 5 mL pure vanilla extract
  • 90 g self-rising flour
  1. Coat inside of mugs with about a tablespoon of melted butter
  2. In a mixing bowl, whisk together sugar, milk, remaining melted butter, vanilla extract and eggs until blended 
  3. Add flour, whisk until smooth
  4. Pour into mugs, no more than half-full
  5. Microwave each for about 90 seconds

Easy Raspberry Trifle

Trifle is a dessert that usually consists of pound cake, fruits, jam, custard and whipped cream.  I changed it to a healthier and easier version by using yoghurt. For the cake base, I used a microwaved mug cake. You can bake your own cake or use a store-bought one.

Makes 3-4 servings
Total time: 30 minutes

For the mug cake

  • 3 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 60 mL milk
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup self-rising flour
  • 1/8 teaspoon salt
  1. Coat inside of  mugs with 1 tablespoon melted butter
  2. In a mixing bowl, whisk together sugar, milk, 2 tablespoons melted butter, vanilla extract and egg until blended (butter may still be warm, add egg at the end to prevent curdling)
  3. Add flour and salt, whisk until smooth
  4. Pour into mugs, no more than half full
  5. Microwave for about 90 seconds

For the trifle

  • 300-400 g mug cake or store-bought cake
  • 100 g fresh raspberries
  • 1/4 cup pure raspberry jam
  • 200 g vanilla flavoured Greek yoghurt
  1. Coarsely mash raspberries with fork, add jam, mix until blended
  2. Layer cake, raspberry mixture, yoghurt in desired container…..Dig in!

Mug Cake

This is definitely the easiest (and laziest) cake recipe I have ever made! It may not be as soft as a regular sponge cake, but it’s equally tasty. I have made a basic and a chocolate cake.

Makes 2 to 3 mug cakes 

For basic cake

  • 2 tablespoons unsalted butter plus some for coating mugs
  • 1/4 cup granulated sugar
  • 60 mL milk
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup self-rising flour
  • 1/8 teaspoon salt
  1. Place butter in a bowl and microwave for about 30 seconds until melted
  2. Coat inside of  mugs with melted butter
  3. In a mixing bowl, whisk together sugar, milk, melted butter, vanilla extract and egg until blended (butter may still be warm, add egg at the end to prevent curdling)
  4. Add flour and salt, whisk until smooth
  5. Pour into mugs, no more than half full
  6. Microwave for about 90 seconds 
  7. Let cool for a few minutes, serve warm.
  8. You can top with icing, whipped cream or fruits after completely cooled

For chocolate cake

  • Add 2 tablespoons of cocoa powder to batter. Top with whipped cream and chocolate syrup!

Cooking time may vary depending on microwaves and size of mugs.
