Date Energy Balls

Except my sweet tooth, I think I have a fairly healthy lifestyle. I exercise regularly, I eat a lot of vegetables and fruits, drink a lot of water. I try to avoid eating too much carbs and fat. And about a month ago, I started doing kickboxing classes ! Yes, isn’t that crazy ?! It is a pretty strenuous workout, but it’s a lot of fun ! And what a great way to release my stresses…..you know, I can just imagine I am punching my “enemies” …. LOL ! And after all the hard punching and kicking, I made these energy balls to treat myself ! They are delicious, nutritious and super easy to make ! Loaded with vitamins and minerals, they sure can give me a kick of energy before or after my class ! Medjool dates and nuts are however, fairly high in calories, so just keep in mind not to indulge yourself too much….even though they are so tasty and healthy !  

Makes about 12 balls

  • 90 g blanched almonds (or other nuts)
  • 250 g medjool dates (about 13-14 pitted dates)
  • 10 g chia seeds 
  • 15 g hemp protein powder 
  • 25 g cocoa powder 
  • 15 mL coconut oil 

  1. Put dates into a food processor and pulse until they are in small pieces 
  2. Add all other ingredients and blend until well combined
  3. Roll into one-inch balls
  4. Keep in refrigerator

No Bake Chocolate Cheesecake 

Baking is one of my favourite things to do. But when it’s so hot outside, even the most devoted baker needs a break ! So I made these no bake cheesecake jars the other day. They are creamy, chocolaty, yummy and super easy to do ! 

As a food blogger, I am constantly looking for props that I can use without spending too much. Plates, cups, cutlery, baking tools, towels, etc. So, kitchenware stores, thrift stores, dollar stores and garage sales have become my favourite places to hang out. And I get super excited when I can reuse or recycle ! It’s like doing a makeover ! These cute little jars were containers of some petit pot yoghurts that I bought. They are perfect for individual desserts ! My only complain…..they’re too petit ! Cause these cheesecakes are so delicious and one is not enough !  

Makes about 8 servings

  • 12-15 graham crackers (or other cookies of choice)
  • 45 g unsalted butter,melted 
  • 120 g semi-sweet or dark chocolate, plus more for garnish 
  • 200 g cream cheese 
  • 120 g icing sugar, sifted  
  • 5 mL pure vanilla extract 
  • 240 mL cold heavy whipping cream 
  1. Crush graham crackers into crumbs and mix in melted butter 
  2. Spoon into containers, press down gently and refrigerate for later use 
  3. Melt chocolate in a double boiler or the microwave, cool slightly 
  4. Place one small mixing bowl in the freezer for about 20 minutes (for making whipped cream)
  5. In another mixing bowl, using an electric mixer, beat cream cheese, icing sugar and vanilla until smooth
  6. Add in melted chocolate, set aside
  7. In the cold mixing bowl, beat 120 mL of the cream until medium peak 
  8. Gently fold into the chocolate cream cheese until just combined 
  9. Spoon or pipe on top of graham cracker base (refrigerate if not serving right away)
  10. Just before serving, whip remaining cream to garnish, top with chopped chocolate 

No Bake Nutella Bites 

Can’t believe September is here already ! Kids are back to school, routines are slowly getting back to normal, and I have to start making lunches and snacks. I made these little energy bites as an after school snack. They are like mini granola bars and are super easy to make. Keep them in the fridge and the kids can just grab them when they want. They come in handy before hockey practices too ! There can be many variations to the recipe.  I used Nutella, but you can also use peanut butter, cookie butter or sunflower butter. You can also choose other nuts, seeds and dried fruits. 

Makes about 25-30 

  • 1 cup quick oats
  • 1 cup rice crispy cereal 
  • 2 tablespoons chia seeds 
  • 2 tablespoons ground flax seed 
  • 1/4 cup unsweetened shredded coconut 
  • 1/2 cup Nutella spread 
  • 3 tablespoons melted coconut oil 
  • 2 tablespoons honey 
  1. Mix all dry ingredients together 
  2. Add Nutella, coconut oil and honey, mix until blended 
  3. With the help of a melon scooper or spoon, roll mixtures into small balls
  4. Refrigerate until firm
  5. Keep in refrigerator
