Funfetti Cheesecake 

Can’t believe 2017 is almost over ! It has been a fun and eventful year for me ! I have tried a number of new things…..I did a 10K run (and I actually ran the whole 10K, not walking !) I did two Christmas markets, selling my cookies for the very first time…..I have also injured my feet (plantar fasciitis) and I am not sure when they will completely healed….but oh well, that’s an age thing too, I guess……But overall, I think I had more good than bad this year ! I hope 2018 will be even better, I already have many plans in my mind ! Hope yours will be a prosperous one too ! 

Here is a fun cake to make for New Year ! Funfetti Cheesecake ! I added some rainbow sprinkles to a basic cheesecake recipe and used shortbread cookies for the crust. I baked the cheesecake in a hot water bath to prevent the cake from cracking….Hope you’ll enjoy it and have a fun New Year ! 

Makes one 6-inch cake

For the crust 

  • 150 g shortbread cookie crumbs (you can use any cookies of your choice)
  • 45 g unsalted butter, melted 

For the filling 

  • 500 g light cream cheese, softened 
  • 180 g granulated sugar 
  • 2 eggs
  • 30 g all-purpose flour 
  • 7.5 mL pure vanilla extract 
  • 25 g rainbow sprinkles

Extra sprinkles and whipped cream for decorating if needed 

  1. To make the crust, mix cookie crumbs and melted butter together 
  2. Press firmly onto bottom of a 6-inch springform pan lined with parchment paper 
  3. Bake for about 8 minutes, cool slightly 
  4. To make the filling, beat together cream cheese and sugar until smooth using an electric mixer 
  5. Add eggs, flour and vanilla, mix until blended 
  6. Fold in sprinkles 
  7. Pour into pan, smooth with a spatula and bake in a hot water bath for 50-60 minutes. You can wrap the bottom of the pan with aluminum foil to prevent seepage 
  8. Cool completely, then refrigerate 
  9. When ready to serve, remove cake from pan, decorate with whipped cream and more sprinkles

No Bake Chocolate Cheesecake 

Baking is one of my favourite things to do. But when it’s so hot outside, even the most devoted baker needs a break ! So I made these no bake cheesecake jars the other day. They are creamy, chocolaty, yummy and super easy to do ! 

As a food blogger, I am constantly looking for props that I can use without spending too much. Plates, cups, cutlery, baking tools, towels, etc. So, kitchenware stores, thrift stores, dollar stores and garage sales have become my favourite places to hang out. And I get super excited when I can reuse or recycle ! It’s like doing a makeover ! These cute little jars were containers of some petit pot yoghurts that I bought. They are perfect for individual desserts ! My only complain…..they’re too petit ! Cause these cheesecakes are so delicious and one is not enough !  

Makes about 8 servings

  • 12-15 graham crackers (or other cookies of choice)
  • 45 g unsalted butter,melted 
  • 120 g semi-sweet or dark chocolate, plus more for garnish 
  • 200 g cream cheese 
  • 120 g icing sugar, sifted  
  • 5 mL pure vanilla extract 
  • 240 mL cold heavy whipping cream 
  1. Crush graham crackers into crumbs and mix in melted butter 
  2. Spoon into containers, press down gently and refrigerate for later use 
  3. Melt chocolate in a double boiler or the microwave, cool slightly 
  4. Place one small mixing bowl in the freezer for about 20 minutes (for making whipped cream)
  5. In another mixing bowl, using an electric mixer, beat cream cheese, icing sugar and vanilla until smooth
  6. Add in melted chocolate, set aside
  7. In the cold mixing bowl, beat 120 mL of the cream until medium peak 
  8. Gently fold into the chocolate cream cheese until just combined 
  9. Spoon or pipe on top of graham cracker base (refrigerate if not serving right away)
  10. Just before serving, whip remaining cream to garnish, top with chopped chocolate 

Pumpkin Cheesecake with Maple Caramel Sauce

October is a busy baking month for me. Thanksgiving, my daughter’s birthday, bake sale, Halloween…. all of them are happening this month. I am not complaining, in fact, I am enjoying it . Apples, pumpkins, corn, the spices, the Halloween decorations ….the aroma, the colours, the fun, I love them all ! For this Thanksgiving, I made a pumpkin cheesecake topped with maple caramel sauce. It is crunchy, creamy, sweet and a little spicy…..just delicious ! And it’s fairly easy to make ! It’s a great alternative to pumpkin pie.

Makes one 6-inch cake

For the crust

  • 120 g ginger snaps
  • 3 tablespoons unsalted butter, melted

For the fillings

  • 250 g soft cream cheese
  • 120 g granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • Pinch of ground nutmeg
  • Pinch of ground cloves
  • 1/4 teaspoon salt
  • 120 g pumpkin puree (homemade or canned)
  • 2 eggs
  • 1 teaspoon pure vanilla extract

For the maple caramel

  • 120 ml maple syrup
  • 15 g unsalted butter
  • 60 mL heavy or whipping cream

Pumpkin Cheesecake

To prepare the crust

  1. Crush ginger cookies into fine crumbs
  2. Mix crumbs with melted butter, press firmly into bottom of a spring-form pan or a cake ring (if you use a cake ring like I did, you have to wrap the bottom with parchment paper as it is bottomless)
  3. Bake for about 10 minutes, let cool

To prepare the cheesecake

  1. When crust is cooled, wrap bottom of cake pan with 2 layers of aluminium foil and place on a rimmed baking tray
  2. Turn oven down to 325ºF
  3. Using an electric mixer with the paddle attachment, beat cream cheese and sugar until smooth
  4. Add flour, spices, salt,pumpkin puree and vanilla
  5. Add eggs, one at a time, mix until just blended, do not overmix
  6. Pour batter on top of crust and place the baking tray into the oven
  7. Pour about one inch of hot water into baking tray and bake for about 40-45 minutes (the top should be a little jiggly, do not overbake)
  8. Turn oven off, leave cheesecake inside oven with door ajar for another hour to cool gradually
  9. Take cake out, let cool at room temperature completely, then refrigerate for at least 3-4 hours

To prepare maple caramel

  1. Melt butter in a non-stick pan over medium heat
  2. Add maple syrup, when boil, turn heat down and simmer for about 3 minutes until thicken
  3. Add cream, stirring occasionally and continue to simmer until thick

When cheesecake is set, serve with maple caramel and whipped cream

Pumpkin Cheesecake

Japanese Cheesecake

Last Sunday, I made this Japanese cheesecake with my daughter. It turned out very nice. It has a lighter taste and a softer texture than a regular cheesecake, but is still very creamy. The special ingredient ? ……. Meringue ! It allows more air to be incorporated into the cake batter and hence, a fluffy cake. So if you find regular cheesecake too heavy, this may just be right.

For the cake

  • 3/4 cup cake and pastry flour
  • 1/2 teaspoon baking soda
  • 400 g soft cream cheese
  • 1/4 cup granulated sugar
  • 60 g unsalted butter, at room temperature
  • 6 egg yolks
  • 200 mL whipping cream
  • 2 teaspoons lemon juice
  • 1 teaspoon pure vanilla extract
  • pot of boiling water for baking cake

For the meringue

  • 6 egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar

To make the cake

  1. Preheat oven to 325ºF
  2. Line a 9 inch spring-form cake pan with slightly greased parchment paper
  3. Wrap base of pan with two layers of aluminium foil to prevent seepage
  4. Sift together flour and baking soda, set aside
  5. Using an electric mixer with the paddle attachment, cream butter, cream cheese and sugar until fluffy
  6. Add egg yolks, lemon juice, vanilla extract and whipping cream, mix until blended
  7. Add flour mixture, mix until smooth
  8. Pour batter into a different large mixing bowl
  9. Clean and dry used mixing bowl thoroughly before making meringue
  10. To make the meringue, use the electric mixer with whisk attachment, whisk egg whites and cream of tartar at medium speed until frothy
  11. Increase speed to high, gradually add in sugar
  12. Whisk until stiff peak is formed
  13. Gently fold meringue into cake batter until just blended, do not over mix
  14. Pour batter into cake pan, place on a tray filled with boiling water and bake for about 60 minutes until golden brown, a tooth pick should come out clear when inserted in the middle
  15. Turn oven off, leave oven door ajar for about 20 minutes before taking cake out. This will prevent cake from shrinking too much due to sudden drop in temperature.  A slight shrinkage is normal.
  16. Remove baking tray, let cool on rack completely
  17. Remove from cake pan, refrigerate for 2-3 hours or overnight in an air tight container
  18. Cut, serve and enjoy!
